
Cocoa Nib Banana Bread
If you like a nut in your banana bread, try this tasty alternative. This recipe adds a hint of chocolate taste to the banana bread.

Cocoa Nibs and Honey
This recipe is a favorite after school snack! The cocoa is said to improve concentration and provide a pick up after a long day at school.
If you use local honey just prior to allergy season, you can reduce some of the sniffles.
1 tbsp cocoa nibs
1 tbsp honey
Mix together and enjoy. I sometimes add a favorite seasoning such as cinnamon, nutmeg or your favorite chili spice.

Cocoa Nib Yogurt Parfait
We eat this for a quick breakfast. Cocoa Nibs have a similar effect as coffee with tons of health benefits.
Every year, we enjoy going blueberry picking at Adams Acres, a short drive from our house. Then, we freeze our blueberries and have them to eat all year. In Virginia, the picked blueberries are a fraction of the cost as the ones we can get in the grocery store.
½ to ¾ cups of your favorite fruit (we usually use berries or bananas have the best taste with cocoa nibs)
½ cup vanilla yogurt
1 tablespoon cocoa nibs
Combine fruit and yogurt
Top with cocoa nibs
Enjoy!

2 cups fresh ground soft flour (about 1/8 cup more if using all purpose flour)
1 teaspoon baking soda
¼ teaspoon salt
½ cup butter
¾ cup brown sugar
2 eggs, beaten
2 cups mashed overripe bananas
½ cup almond milk
1 teaspoon vanilla.
Preheat oven to 350 degrees F. Lightly grease a 9×5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt.
In a separate bowl, cream together butter, brown sugar and vanilla.
Stir in eggs, mashed bananas and almond milk until well blended.
Stir banana mixture into flour mixture, stir just to moisten. Stir in cocoa nibs. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf pan comes out clean. Let bread cool in pan for 10 minutes, then turn out into a wire rack.
